Aunque podemos encontrarla todo el año en los mercados, a partir de junio empieza la campaña de recolección y podemos disfrutarla en plena temporada.

Elaboración
Corta en finas lonchas el calabacín y monta los libritos con el queso en medio. Pásalos por harina huevo y pan rallado. Fríe los libritos en abundante aceite caliente durante dos minutos por cada lado. (el calabacín tiene que quedar tierno)
Sécalos con papel absorbente para quitar el exceso de grasa.
Por otro lado prepara el cus-cus siguiendo las indicaciones del fabricante.
